Cooking With Love: Chef Hanoze at Gather

Gather is a celebration of food, community, and the simple joy of coming together.

There’s a quiet confidence about Chef Hanoze Shroff. The kind that doesn’t need elaborate introductions or flamboyant gestures, his food speaks for him. Over a decade in the industry has taken him from the hallowed halls of The Oberoi Group to the buzzy tables of Jamun in Goa and Ping’s Café Orient, and yet, at the heart of it all, his philosophy remains deliciously simple: cook with love, and everything else will follow.

He began his journey at IHM Aurangabad and polished his craft at the Oberoi Centre of Learning and Development, but Chef Hanoze isn’t one to rattle off credentials. Instead, he tells stories through his food. And his stories aren’t rehearsed, they’re spontaneous, heartfelt, sometimes playful. After a long day at work? his go to meal is: “Oh, eggs or noodles, maybe ramen. As simple as good quality eggs, that’s it,” he laughs. In his fridge, one thing you will find is Juju’s Scorpion Sting.

This balance, refined yet grounded and it is what defines him. Inspiration, he says, is everywhere. From TV shows he watched as a child, to the joy of reading, to the people he works with every day. “Our team is from everywhere, across India and beyond. And we work with a simple philosophy: we work for the customer. It doesn’t matter who they are. Everyone is treated equally, and we cook with love. That’s the only way the guest will feel it.”

It’s also why he believes Indian food is having its long-overdue moment. “Indian cuisine is finally in the spotlight. And it’s only going to get bigger. Regional Indian, especially I think we’ll see more and more speciality restaurants open up.”

At Gather, his newest chapter in Pune, that philosophy comes alive. The restaurant is designed not just as a dining room, but as a space where food and community meet—where regional flavours are celebrated, conversations flow as easily as the cocktails, and every plate feels like it was made just for you. Gather is not about grandeur, but about intimacy. It’s the kind of place where food becomes memory, where you walk away feeling full in more ways than one.

“Food, at its heart, is about love,” says Chef Hanoze. “And at Gather, we want that love to be felt in every plate and every interaction.”
