More than a decade after their launch, Delhi-based Tres has launched a tasting menu with some much-loved dishes.
The lazy familiarity of Delhi’s Lodhi Colony with its tree-lined avenues and cool breeze may lull one into thinking that the buzz is elsewhere. However, a peek into Tres, the lovely European-themed restaurant which has been a favourite spot for many loyal customers for more than a decade, is enough to dispel that misconception. Even in the middle of the week, there is the clink of glasses and the comfort of conversations and laughter that makes Tres the go-to place for celebrations, romantic dates and fun-filled family outings.


Adding to the revelry is Tres’ tasting menu, a specially curated seven-course meal that brings out the best of the restaurant over the years. Crafted by Chef Partners Jatin Mallick and Julia Carmen Desa, the Best of Tres tasting menu is paired with fine wines, Prosecco, bespoke cocktails and vermouth, offering diners an immersive experience that goes beyond a meal. Once we were settled in our comfortable cushioned chairs with a view of the stunning 14-feet-long bar, Jatin explained the menu’s philosophy. “This menu is an amalgamation of our best experiences and what we feel are our signature dishes. We have been here for a while and we wanted to take our customers through our journey with what we think we serve best,” he shared.
We kicked off the meal with pan-seared scallops, with a dash of raw mangoes and green olives. Scooping up the leafy green and having it in one go, the crunch from the crispy quinoa was the first thing we noticed before the dish melted away in our mouths with a creamy goodness. The dish was paired with the aromatic and crisp Ca’ del doge prosecco DOC spumante from Italy.

The next two dishes that followed upped the ante even more, the first being the chicken liver ice cream followed by the goat cheese bavaroise. The former was a creamy chicken liver ice cream served on a bed of shallot marmalade and walnut-apple dressing – the play on textures elevating the flavour of the dish. The latter was a melange of refreshing flavours including goat cheese, beets, orange, walnut-apple and rye crisps. Brownie points for making each dish look like a piece of art served on the table. The latter was served with a mildly sweet gin cocktail with strawberry, rose syrup and vermouth.

The mains did not disappoint either. Whether it was the mustard crusted seabass with a banging miso lemon emulsion or the buttery kale ricotta cappelletti with crispy kale and parmesan shavings, the dishes were delicately-plated, yet wholesome and robust. The former was paired with a crisp and fruity Camas Sauvignon Blanc from France which complemented the seafood beautifully while for the latter, we were served the smooth and fine Tombacco Biferno Rosso Reserve from Italy. The creamy morel, shitake, cep risotto with white truffle oil was the last of the mains and made an impression on our palate as well.
No meal is complete without dessert and the dark chocolate ganache served with caramelized hazelnut, orange meringue and passion fruit sorbet did complete justice to the sentiment. Paired with the luscious Otto’s Athens vermouth with its delicate notes of vanilla, citrus and rose, this was the perfect finale to a beautiful meal. The Best of Tres tasting menu certainly does justice to its name, bringing into focus the ingredients, techniques and flavours which have made the restaurant a favourite culinary destination for many in the capital. It’s not just a meal but storytelling on the table.
